This was my first baking class attended in Jia Lei Confectionery & Traning Centre. I could still remember how excited I was during that day! The place looked abit run down and it might be the reason why not many people attended the class. So far there were only 2 students (including myself) attended the class.
Honestly I felt that this class is more suitable for those people who already had some basic knowledge about cake baking. When i first reached the place, the basic sponge cake was already been baked & ready to prepare for decoration. The teacher then taught me to mix brandy, honey and water and pour evenly into the cake. There were many question marks in my mind LOL.
After that I was taught to place the basic cake onto the cake turntable and whip it. The teacher first demonstrated how to whip the cake with frosting cream and then my turn to continue whipping the cream. As it was my first time whipping cake with frosting cream it was like a disaster. Hence the teacher hold my hand and taught me how to hold the whipping cream knife correctly. It was more of 3/4 demo + 1/4 hands on class. Once the whipping is done the cake was sent into fridge to keep cool.
While waiting for the cake to turn cold, we were taught to use the whipping cream and white sugar to whip frosting cream using their Kenwood Mixer.
Once the frosting cream was done, the teacher demonstrated how to make melted chocolate using chopped chocolate & milk. The melted chocolate was to be used to pour onto the cake while it was still warm. We were given some chocolate pieces and fresh strawberries to decorate the cake.
Here's the recipe,
Ingredients:
1) Butter 35g
2) Self Raising Flour 60g
3) Cocoa Powder 1 dsp
4) Egg x3
5) Sugar 60g
6) Baking Soda 1/3 tsp
7) Chocolate Paste 1 tsp
Brandy Syrup
1) Brandy 1 tsp
2) Honey/Golden Syrup x 1 tsp
3) Water 2 tsp
Melted Chocolate
1) Chopped Chocolate 100g
2) Milk 40g
Method:
1) Grease & line 2x 7" tin with greaseproof paper
2) Preheat oven at 200c for 20min
3) Melt butter, add in choco powder. Sift self raising flour & baking soda
4) Separate egg whites & egg yolks. Beat egg whites with sugar till soft peak. Add in egg yolks and mix well. Fold in flour and stir in slowly with hand
5) Pour in butter & choco powder and mix well. Pour into tin and bake for 8min. Remove to cool.
6) Once cake cooled down, pour in brandy syrup evenly into the cake
7) Put a piece of cake into cake turntable, pour into berry jam and spread evenly
8) Cut the edges of the cake before applying fresh cream on it
9) Boil water, turn off fire after boiled. Heat milk over hot water, add in chocolate and stir well
10) Spread the melted chocolate (warm) over the cake. Smoothen the surface and decorate as desired
